SUMMER IN AUSTRALIA-A COOL COCKTAIL THAT DOUBLES AS DESSERT FROZEN WATERMELON DAIQUIRI

dscn1135INGREDIENTS

1 small seedless water melon, diced and frozen over night

150 ml white rum

50 ml Triple Sec

juice of 2 limes

rind of the 2 limes

2 cups of ice

METHOD

1- In a blender pulse frozen watermelon with rum, Triple Sec, lime juice and ice.

2- Spoon together into chilled Martini, or Margarita glasses.

3- Garnish with watermelon wedges and lime rind and serve immediately

TIPS

  • This cocktail- dessert can be made without alcohol.  Just add more melon and a few mint leaves before you put the mixture in the blender.
