COMFORT FOOD IN A FLASH – GARLIC PRAWNS SPAGHETTINI

DSCN1262This is a great pasta dish to cook for friends on a cool winter’s night or a sunny summer’s day for lunch.  It is hearty and delicious.

INGREDIENTS

200 grams spaghettini

40 grams of salty butter

1 tablespoon olive oil

4 garlic cloves, sliced

1 teaspoon dried chilli flakes

2 tablespoons lemon zest

1/2 kilo prawns, peeled (leave on the tails), and cleaned

1/2 teaspoon lemon juice

1/4 cup of flat parsley, finely chopped

salt and pepper to taste

METHOD

1- Cook the pasta in a large sauce pan of boiling salted water until al dente.

2- While the pasta is cooking heat a frying pan over medium heat.  Add the butter and olive oil and cook until the butter has melted.

3- Add the garlic, the chilli, the lemon zest, and a pinch of salt and cook for 2 minutes.

4- Add the prawns and cook for 3 minutes until the prawns are tender.  Stir them to cover with the sauce.

5- Drain the pasta and add it to the prawn mixture.  Add the lemon juice, the parsley, and salt and pepper to taste.   Toss to combine.

6- Drizzle some olive oil on top of each serving.

TIPS

  • Cook the garlic until it is just soft, but not brown.  If the garlic is brown it will taste bitter.
  • You can also add a mixture of chives and Italian parsley finely chopped to the pasta.
