DSCN9064Treat your Mom to this sweet and gorgeous dessert.


1/4 cup unsalted butter

1/4 cup firmly packed brown sugar

2 tablespoons fresh lemon juice

2 cinnamon sticks

2 ripe bananas, peeled, halved lengthwise and crosswise

1/4 cup triple sec or other orange liqueur

1 tablespoon dark rum

1 teaspoon ground cinnamon

3 tablespoons ground cinnamon

3 tablespoons orange juice

2 cups vanilla ice cream

1/2 cup Thai style sweet chili peanuts, crushed


1- Melt butter in heavy large skillet over medium-heat.

2- Add sugar, lemon juice and cinnamon sticks and boil 2 minutes, stirring frequently.

3- Add bananas.  Remove the pan from heat.

4- Add triple se, rum and ground cinnamon; ignite with a match.

5- When flames subside add orange juice and stir gently to combine; discard cinnamon sticks.

6- Scoop ice cream into bowls or plates.  Spoon bananas and sauce over and serve.


-Crush 1/2 cup of Thai Style Sweet Chilli Peanuts on top of the bananas and the ice cream.  These peanuts give the dish a knick.
