1 kg zucchini
1 medium red pepper, finely chopped
1 large red chilli without the seeds, finely chopped
1/4 cup olive oil
1/4 lemon juice
1 teaspoon sugar
3 teaspoons honey
2 tablespoons chopped fresh mint
1 teaspoon cracked black peppercorns
salt to taste
1- Using a vegetable peeler, peel thin strips from zucchini. Combine zucchini and pepper in large bowl, add the dressing.
2- Toss lightly with your hands
1- Combine all ingredients in a jar. Shake well.
2- Add dressing just before serving.
– Dressing can be made 3 days ahead.
