MINTED ZUCCHINI RIBBONS

DSCN2675When you add herbs, you add flavour.  Fresh, wonderfully pretty and tasty salad.

INGREDIENTS

1 kg zucchini

1 medium red pepper, finely chopped

1 large red chilli without the seeds, finely chopped

MINT DRESSING

1/4 cup olive oil

1/4 lemon juice

1 teaspoon sugar

3 teaspoons honey

2 tablespoons chopped fresh mint

1 teaspoon cracked black peppercorns

salt to taste

METHOD

1- Using a vegetable peeler, peel thin strips from zucchini.  Combine zucchini and pepper in large bowl, add the dressing.

2-  Toss lightly with your hands

Mint Dressing

1- Combine all ingredients in a jar.  Shake well.

2- Add dressing just before serving.

TIPS

– Dressing can be made 3 days ahead.
