An aromatic and delicious vinaigrette that never fails. I saw this recipe done by Chef Jean-Christophe Novelli. His secret is to add some warm water to the ingredients in the vinaigrette to release all the flavours inside a jar.
4 tablespoons white wine vinegar
8 tablespoons olive oil
2 tablespoons honey
2 tablespoons Dijon mustard
1 garlic clove, peeled and chrushed
2 sprigs thyme
1 sprig rosemary
2 shallots, thinly sliced
salt and pepper to taste
2 tablespoons hot water
1- Mix all the ingredients except the oil and hot water in a jar with a lid. Then, add the oil, boiling water, salt and pepper to taste.
2- Close the lid and shake the jar well. Once the vinaigrette is cold, place it in the fridge for at least one hour. The vinaigrette will taste better the longer it is in the fridge.
– If you want the vinaigrette less creamy add more boiling water.
– This recipe is best done the night before.
– This vinaigrette will keep in the fridge for ever.
