EARLY FALL, LETS HAVE A BIT OF DANISH TRADITION – BEEF PATTIES WITH ONIONS AND FRIED EGGS

DSCN2416This is one of my favourite Danish dishes.  It is a good recipe to start the Autumn.  Serve this dish with gherkins, pickled red cabbage and boiled new potatoes.

 

INGREDIENTS

450g lean minced beef

3 tablespoons bread crumbs

1/4 cup finely chopped onions

1 egg

1/4 cup chopped parsley

1/2 cup milk

5 tablespoons butter

3 medium onions, sliced

4 eggs for frying

salt and ground black pepper

METHOD

1- Put the beef in a mixing bowl, add the bread crumbs, chopped onion, egg and parsley and mix well.  Gradually stir in the milk until thoroughly blended to make a soft, moist mixture.  Season with salt and pepper.  Refrigerate for 15 to 30 minutes.

2- Melt 3 tablespoons of the butter in a pan over a medium heat.  Divide the meat mixture into four and form rounded patties.  Place in the pan and cook for 8 to 10 minutes until browned, turning once.  Remove from the pan and keep warm.

3- Melt the remaining butter in the pan, add the sliced onion and cook for 6 to 8 minutes, until soft and golden.  When the onions are ready, fry the eggs in a little hot oil in a separate pan.

4- To serve, place the patties on four serving plates and top each with a spoon of cooked onions.  Place a fried egg on the onions, season the egg with salt and pepper and served immediately.

TIPS

– These are not meat balls they are beef patties.
