They were relatively unknown until recently but once you’ve tried one, you can’t forget how sweet, fresh, juicy and firm they are. I though baking them with honey will make a great accompaniment with any sort of blue cheese, I choose sweet Gorgonzola.
2 tablespoons of honey
200g sweet Gorgonzola
1/2 Baguette thinly sliced and baked in the oven
Sprigs of thyme
1- Pre-heat the oven to 200 degrees. Lightly grease the baking pan with butter.
2- Place the Paraguayos into the baking pan and drizzle with honey.
3- Bake for 15 minutes, or until the paraguayos are tender. Set aside to cool.
4- Once they are cold take the Paraguyos aside and peel the skins with your hands (this is a very easy process).
5-The paraguayos make a lot of juice. Reduce the juice to half and then put the Paraguayos back into it. Put them in the fridge to marinate for 24 hours.
6- Serve the Paraguayos with slices of Gorgonzola cheese, thin slices of crispy bread and sprinkle with thyme leaves.
– Decorate each Paraguayo with a sprig of thyme.
