EASY VANILLA AND BOURBON ICE-CREAM WITH ROASTED PLUMS

DSCN8034For all ice-cream lovers this is YOUR recipe. You do not need to make a custard or use an ice-cream machine BUT the end result is a homemade vanilla ice-cream which is creamy and smooth.

INGREDIENTS

1 can sweetened condensed milk

2 teaspoons vanilla extract

1 tablespoons bourbon

2 cups whipping cream

METHOD

1-  In a medium bowl stir in the condensed milk, vanilla and bourbon, mix well.

2- In a large bowl using an electric mixer beat the cream until it is stiff.

3-  Using a spatula, gently fold the whipped cream into the condensed milk mix.

2- Put it in a freezer container covered with cling film and freeze overnight.

ROASTED PLUMS

Ingredients

500g plums

Juice 1/2 an orange

4 tablespoons brown sugar

1 star anise

METHOD

1- Heat the oven to 180C. Cut the plums in half, taking out the pips, and arrange them in a single layer in a baking dish.

2- Sprinkle the brown sugar on top and tuck the star anise among the plums and drizzle with the orange juice.

3- Bake for 15 minutes.  The plums should be soft but not mushy.

4- Separate the fruit from the juice.  Put the juice into a small pan over a medium heat and reduce it.  Add the plums and set aside to cool

5-  Serve with the ice-cream.

TIPS –

– Instead of plums use nectarines, peaches or apricots.
