As I was browsing through some magazines on my flight back from Australia to Copenhagen I found this recipe. So this year instead of eating out I am staying in, I will turn on the oven and open a bottle of Champagne.

1 small Camembert in a wooden box ( 250g)
1 garlic clove, sliced thinly
A handful of thyme sprigs
A splash of white wine
Warm, crusty bread
1- Preheat the oven to 180C.
2- Unwrap the cheese, but keep the box.
3- Carefully slice off the top rind. Make some shallow cuts into the surface of the cheese and insert slices of garlic and tiny sprigs of thyme.
4- Return the cheese to its box, cut-side up.
5- Douse with a splash of white wine and bake uncovered for 10 to 15 minutes or until the cheese is molten.
6- Serve with chunks of warm bread or slices of boiled potatoes to dip into the melted cheese.
– Bring the cheese to room temperature before you put it in the oven, otherwise it will take forever to cook.
– Place the box on a tray just in case it leaks. This also makes it easy to handle.
