Going Bananas !!!
This most popular Indonesian and Thai snack is my weakness. I am always looking for them in markets, or from street vendors. There are so many ways of making them but after trying many recipes I came to the conclusion that they are not that easy to make. It is important that the end result is a crispy and golden brown banana.
THIS RECIPE WORKS EVERY TIME
1 cup wheat flour
1/2 cup rice flour
2 tablespoons tapioca flour
1 teaspoon baking powder
1/2 cup sugar
1 1/4 teaspoon salt
1 cup coconut cream
1 tablespoon black or white sesame seeds
6 firm, ripe bananas, peeled and halved diagonally
vegetable oil for deep-frying
1- In a mixing bowl, mix all the flours, baking powder, sugar, salt and coconut cream. Mix well together to make a batter.
2- Add black or white sesame seeds, AND OR grated fresh coconut.
3- Heat vegetable oil over medium heat.
4- Cut each banana long ways into about 4 pieces.
5- Dip bananas in the batter ( two to four at time). Deep fry the bananas until golden brown.
6- Remove them with a slotted spoon and drain on paper towels
– You can add to the mixture 80g fresh grated coconut. The coconut gives a great flavour and texture to the batter.
– Tide 2 Pandan leaves (if available) and put them in the oil, this also gives flavour to the bananas.
– Do not use bananas that are too ripe. They will be soggy after you fry them.
– Instead of bananas sweet potatoes can also be coated with this batter.
