STRAWBERRY GAZPACHO

BERRIES IN MY KITCHEN

From the first of June strawberries, raspberries, and blueberries are eagerly anticipated and treasured in Denmark.  They are grown in the wild, in gardens, on farms, and in pots. My inspiration for these classical summer desserts came from a short walk to the local supermarket, since I don’t have a garden or space on my small balcony. In Denmark strawberries slowly sun-ripen during the long summer days, and enjoy a unique character and sweetness.  They are absolutely delicious !!!

Makes 4 small glasses

INGREDIENTS

500 gr fresh strawberries

Juice of one orange

1 spoon of honey or caster sugar

Mint leaves to decorate

METHOD

1-In a medium size bowl put strawberries, orange juice and honey and blend with an electric whisk. This can also be done in the liquidiser.

2-Pour into small glasses and decorate with mint leaves

TIP – When blending the strawberries do not over do it, try to leave some small pieces.  This gives the texture of a proper Gazpacho.
