I really like to read and browse cookbooks and food magazines. I let the pictures, the recipes and my imagination inspire me. This recipe is the result of one of those days at the hairdresser when you have to be there for hours and have lots of time to look at old magazines that they have lying around.
My friends love this recipe because it is easy, quick and most of the time they have all the ingredients at home.
Sausage, eggs, cheese. What a brilliant combo !!!!!
¼ cup olive oil
2 chorizos, thinly sliced
8 medium size potatoes, thinly sliced
1 onion, thinly sliced
6 garlic cloves, finely chopped
1 tablespoon finely grated lemon rind
1 cup Manchego, grated
1/3 cup chopped parsley
Salt and pepper to taste
1- Heat half of the olive oil in a cast-iron pan over medium-high heat. Add the chorizo and sauté until crisp. Transfer to a bowl with a slotted spoon and set aside.
2- Return the pan to the heat and add the remaining olive oil. Add potato and sauté until tender; add onion and garlic and sauté until tender. Drain in a colander (reserve oil) and then put the sauté potatoes, onion and garlic in the same bowl as the chorizo.
3- Whisk the eggs and lemon rind lightly to combine in a bowl, season to taste and pour over the potato and chorizo mixture, Stir through Manchego and parsley.
4- Return cast-iron pan to the stove over a low heat and add the reserved oil. Once it is hot pour in the egg mixture.
5- When the underside of the egg begins to brown and is firm, place a plate over the pan and flip the tortilla.
6- Cook the other side of the tortilla. Shake the pan to loosen it. Let it stand for a few minutes.
TIP – Manchego is an expensive cheese and not always available. You can substitute it with a tasty mature Cheddar.
