HAPPY NEW YEAR !!!!!
This recipe is simply elegant and tasty for the New Year celebrations.
1 cup self-raising flour
Pinch of salt
1 egg lightly beaten
¾ cup water
1 teaspoon lemon juice
2 cups corn kernels
4 tablespoons spring onions, sliced
4 tablespoons coriander, chopped
1/2 cup sunflower oil
200g thinly sliced smoked salmon.
1- Sift the flour and salt into a bowl.
2- Add the egg, lemon juice and water and beat to combine.
3- Stir through the corn, spring onions and chopped coriander.
4- Heat the oil in a large frying pan. Add 2 tbsp of mixture per fritter and flatten with the back of your spoon.
5- Cook until the edges turn golden brown, turn over and when cooked, rest on a plate covered with a kitchen towel.
6- Top the corn fritters with the smoked salmon and serve with lemon wedges to squeeze over with horseradish cream on the side.
1 cup thickened cream
4 tablespoons creamed horseradish
1- Beat the cream until soft peaks form then stir in the horseradish.
TIP: To spice the fritters up a little you could finely chopped red chili to taste.
