During the beautiful summer evenings at my home in Perth, these prawns are a favorite. This recipe is a true statement that “less in more”.

Marinade for the prawns

2 tablespoons vegetable oil

2 tablespoons lime juice

4 cloves garlic, crushed

1 teaspoon dried chili flakes

16 medium size prawns, peeled with the tails intact

For the Mayonnaise

½ cup mayonnaise

2 tablespoons lime juice

½ cup chopped coriander leaves

1 tablespoon sour cream

2 tablespoons water

Salt to taste


1-     Place the oil, lime juice, garlic and chili in a glass bowl.  Season this mixture with salt and pepper.

2-     Add the prawns and toss to combine with the marinade.  Cover and refrigerate overnight.

For the Mayonnaise

1-     Place all ingredients in a bowl and combine well.  Add salt and pepper to taste.

For The Prawns

1 – Cook the prawns on a hot pan or on the BBQ for 2 minutes or until they change color.

2 – Place prawns on a large platter, with a small bowl of mayonnaise on the side.

3- Serve immediately

 Tip – This dish can also be served as a starter for a dinner party by putting a few prawns with the mayonnaise for each guest.
