Prawn Quesadillas

If you are looking for a great tasting quesadilla for your family, this is the one.  I often rely on this recipe when I am tired and do not want to do too much cooking.


2 tbsp vegetable oil

2 cups shelled and deveined prawn, coarsely chopped

1 cup red pepper, thinly sliced length ways

1 medium onion, finely chopped

1 red chili, chopped finely, discard seeds

1 cup tomatoes, chopped

1 cup shredded Mexican cheese blend

½ cup coriander, chopped finely

1 tbsp lime juice

1 tsp cumin

1tsp oregano

1 tbsp taco mix

8 soft-taco-size flour tortillas


1-     In a heavy based pan, heat oil on medium heat for one minute.  Add the cumin and oregano and fry until you can feel the fragrance of the spices.

2-     Add the onion and cook until they are transparent.  Add the red pepper, tomatoes and chili.  Cook until tender, stirring frequently.

3-     Add the prawns and lime juice, cook for 3 minutes then add the taco mix, coriander, and salt if needed.

4-     Transfer the mixture to a medium bowl and let it cool.

5-     Heat another heavy based pan on medium-low heat, place one tortilla, and sprinkle with 2 spoons of prawn mixture and 3 tbsp cheese.

6-     Top with a second tortilla, pressing lightly.

7-     Cook quesadilla until lightly toasted and then carefully turn quesadilla and cook until the cheese melts.

8-     Repeat to make the rest of the tortillas.

9-     Cut into wedges to serve.

10- Serve with guacamole, salsa and sour cream.


Tip – Do not overfill the tortillas or the filling will fall out when you press them.
