This is my version of the fruit salad and in my opinion it reigns supreme. It is heavily influenced by my lifelong love affair with the Orient. I have spent the greater part of my adult life in Asia and have had the good fortune to explore their many markets. Latin America shares a lot of South East Asia’s fruits, which is why I have always felt at home. This recipe is both delicious and aesthetically beautiful, definitely a crowd pleaser.
For the Syrup
½ cup caster sugar
8 star anise
10 tbsp water
Juice of 2 limes
For The Fruits
Selection of oriental fruits such as papaya (paw paw), pineapple and mangos, sliced.
1- To make the syrup, put the sugar and star anise into a saucepan with the water, heat very slowly until the sugar has dissolved, then bring the syrup to the boil. Simmer for 2-3 minutes.
2- Remove from the heat, add the lime juice and allow to cool.
3- Slice the fruit, and arrange in a serving dish. Pour the syrup with the star anise over the fruit.
4- Serve immediately.
TIP: You can make the syrup the day before and keep it in the refrigerator.
You can also use any combination of fruits such as mangos, pineapple and star fruit.
